Au Gratin Potato Bread RecipeBy Steve NubieThis is a very rich bread with a distinct potato flavor.  As an added feature we’ve topped it with thin slices of potato to signal the nature of the bread.  It’s a bread that was always popular in Europe from Ireland to France to Poland.  It’s easy to make in your bread machine from start to finish.
Almond Cake Bread RecipeBy Steve NubieAlmond bread is a cake bread or batter bread that gets its almond flavor from almond paste and a topping of slivered almonds.  Like all cake breads the dough resembles pancake batter rather than the customary dough ball.  That’s because baking powder is used in place of yeast.
Carrot Cake RecipeBy Steve NubieThis recipe for carrot cake can be made in the bread machine from start to finish if your machine has a cake-bread or batter-bread setting.  If not, you can use a pizza dough or pasta dough setting and finish in the oven.  The standard dough setting could also work but you’ll want to remove the batter before the usual rising cycle begins.
Chelsea Buns RecipeBy Steve NubieChelsea buns were introduced by the Chelsea bakery in England in the 1800’s. They were immensely popular and still are to this day. They’re essentially a cinnamon roll type of recipe with the addition of raisins and the recipe can be started in your bread machine using the dough cycle. After the dough setting is complete the dough is rolled out with a rolling pin, and then rolled by hand into a shape like a cinnamon roll or jelly roll. This is still a popular favorite in England with coffee or tea and makes a great dessert. They’re also good as an after-school snack and on midafternoon, rainy days. You can use any variety of raisin you like from brown raisons to blonde raisins to currants. A variation could be the use of cranraisins but the traditional English recipe called for the dark raisins. One thing to take note of is that the raisins should be added after the first kneading cycle at the beep. The second need will incorporate them. If your machine has a fruit and nut hopper add the raisins to the hopper but dust them with flour first so they don’t stick to the side of the hopper.
Jalapeno Bread RecipeBy Steve NubieThis is a spicy and easy to make bread in your bread machine. It goes great with chili or any meal with a Mexican or Creole foundation. You can either use fresh jalapenos chopped, or canned jalapenos that you chop. What’s important is to make sure you strip the seeds from the jalapenos. The seeds are the hottest part of any pepper. If you like it really hot -leave the seeds. You can also reserve some chopped jalapenos to top the loaf after the rise cycle and before the baking cycle begins in the bread machine. Do this quickly and close the lid and leave closed throughout the baking cycle. You also have options with the cheese ingredient. We’re recommending Cheddar but any cheese will do as long as you stick to the ½ cup portion size. However, you can also sprinkle some reserved shredded cheese on top when you top the reserved jalapenos, but once again – do this quickly or the rise in the loaf may fall.
Kaiser Rolls RecipeBy Steve NubieIt should be no surprise that Kaiser rolls had their origin in German republics. In actual fact it’s believed to have been named after Kaiser Franz Joseph 1 of Austria. He had agreed to help the baker’s guilds to manage the cost of wheat and bread and it seems they named a roll after him. The accuracy of the story varies but it seems to make sense. The great thing about Kaiser rolls is the bun integrity. They have a bite or chew because of their consistency and will stand up to the most ambitious and robust combination of ingredients. Unlike regular, white buns that can fall apart in your hands with a large burger, Kaiser rolls will never let you or anything on the bun down. Their classic shape features a slightly swirled star on the top that creates 5 distinctive pieces to each roll. The dough itself is easy to make in the bread machine using the dough setting, and then we’ll go through the steps to make rolls with photos for each step. One thing to note is that there is actually something referred to as a “Kaiser Roll” stamp. This makes it easier to create the distinctive star shape on the top of the roll, but you can also do this with a sharp knife. The rolls are then finished in the oven.
Anadama Bread RecipeBy Steve NubieAnadama bread is essentially a white bread with the addition of a little corn meal and a strong flavor note from molasses. It’s a light and slightly sweet bread and goes great with any meal or on its own with a pat of butter or a smear of jelly. The folklore behind the name is a bit dubious although I’ve come across the story a couple of times. Supposedly a fisherman was dissatisfied with the bread his wife would bake. Her name was Anna. After concocting his own recipe and baking the bread he exclaimed, “Damn, Anna. My bread is better than yours.” I’m a bit incredulous about this story but it keeps showing up. Regardless, this is a very good bread and it’s easy to make in your bread machine.
Ginger Bread RecipeBy Steve NubieThis is a curious recipe in the sense that it’s not about making a traditional gingerbread cookie, but making a bread with ginger as an ingredient resulting in a “Ginger” bread. In actual fact, this is a cake or ”batter” bread. You can always tell a batter bread because it uses baking soda and/or baking powder in place of yeast. You also have an option with the ginger flavor. You can use fresh ginger that has been peeled, sliced and processed to a mash in a food processor, or you can use powdered, ground ginger from a jar if you don’t have fresh ginger on hand or don’t want to add the processing step to the recipe. Both approaches yield a good ginger flavor although the fresh ginger approach delivers a slightly stronger ginger flavor-note to the bread. For this recipe, you can either use the cake bread setting if your machine has one, or you can use the pasta dough or pizza dough setting to make the batter and finish it in the oven. Unlike yeast breads, batter breads don’t rise before baking. That’s why you don’t use the usual dough setting. The standard dough setting has a rise cycle that’s not needed for a batter bread. They rise in the machine or in the oven towards the end of the baking cycle. This bread is great at breakfast or at tea-time with a cup of tea or coffee. It also serves as a great dessert especially around the holidays.
Pinwheel Herb Bread RollsBy Steve NubieThis is a classic white bread and wheat bread roll recipe with a variety of herbs to make them savory and satisfying. The bread itself is shaped into a pinwheel shape which invites people to tear off a piece as they eat. It’s a great bread for holidays, celebrations and family get togethers. In fact, the next time you go to a party or gathering and wonder what to bring -this herb pinwheel loaf might do the trick. Like other recipes we’ve featured, this recipe starts with the dough setting on your bread machine and after the rise you shape the pinwheel on an oiled baking sheet. You let them rise a second time and finish the rolls in the oven. You can vary the recipe any way you like and improvise with the toppings or simply leave them off altogether.
Beer Rolls RecipeBy Steve NubieYes, beer rolls are great with beer but there’s more to it than that. They’re actually made with beer. A dark beer like a Stout or Bock is the beer of choice but there’s a catch. You have to pour the beer into a bowl and let it rest at room-temperature for 4 hours so it gets warm and flat. That’s not the way most of us like our beer, but the yeast in your dough will love it. You’ll be using the dough setting on your bread machine and then shaping the dough into rolls and finishing them on a baking sheet in the oven. These rolls are great with robust meals like beef or pork roasts or turkey and chicken. They’re also very good with beer. The key is to use a malty beer as opposed to a beer like an ale that’s high in hops. There’s also an accent of cinnamon and nutmeg that gives this recipe a nice flavor-note and the honey and the butter give it a smooth sweetness.
Samosas RecipeBy Steve NubieSamasos are a classic and traditional Indian dumpling that is sometimes served as an appetizer or as a side-dish to a main meal. They can be filled with just about any ingredient and are then baked or fried. You’re bread machine can make the process easier using the pizza dough or pasta dough cycle to make the samosa dough. You don’t need to use the traditional dough setting because it has a rising cycle that’s unnecessary for a dough without yeast. We’ll also go over the traditional filling made with ground lamb and a variation with ground beef.
Bacon Onion Cheese Bread RecipeBy Steve NubieWow! Is this recipe packed with flavor. This is a bacon-onion cheese bread that’s easy to make starting with the dough setting on your bread machine. You finish it in the oven because you have to roll up the bacon, onion and cheese as a filling. This bread is a little complicated to make and takes some time, but it’s worth it. This bread is great for grilled cheese sandwiches, as a foundation for French toast and is great just to eat as a side dish with a soup or salad. The key is to make sure the bacon is crisp and the onions caramelized to give it a flavorful punch.
