Au Gratin Potato Bread Recipe

This is a very rich bread with a distinct potato flavor.  As an added feature we’ve topped it with thin slices of potato to signal the nature of the bread.  It’s a bread that was always popular in Europe from Ireland to France to Poland.  It’s easy to make in your bread machine from start to finish. 

You have a couple of options with the potatoes.  You can use dehydrated instant potatoes or use your own freshly made mashed potatoes.  I prefer the fresh mashed potato approach because I think it delivers more flavor.  Another significant flavor note is the addition of cheese.  You can use any cheese you like as long as you stay true to the proportions. 

INGREDIENTS:
 ¾ cup of heavy whipping cream (milk can be substituted) (110° F./ 43° C.)
 ½ cup of water (110° F./ 43° C.)
 1 ½ tablespoons of melted butter
 1 cup of mashed potatoes
 1 ½ teaspoons of salt
 1 ½ tablespoons of sugar
 1 cup of shredded cheese (your choice on the cheese)
 ¼ cup of diced onion
 3 cups of bread flour
 1 ½ teaspoons of yeast
 ½ cup of thinly sliced potatoes for topping
 1 egg yolk and 1 teaspoon of water whisked for glazing
 Herbs like black pepper and parsley sprinkles for final topping
DIRECTIONS:

Add the ingredients in the order listed to the bread machine and select the basic white bread setting.

When the rising cycle is complete, quickly top with the thin potato slices and glaze with the egg wash and herbs and close the lid until the cycle is complete.

Let rest for 10 minutes and serve.
