You have a couple of options with the potatoes. You can use dehydrated instant potatoes or use your own freshly made mashed potatoes. I prefer the fresh mashed potato approach because I think it delivers more flavor. Another significant flavor note is the addition of cheese. You can use any cheese you like as long as you stay true to the proportions.

When the rising cycle is complete, quickly top with the thin potato slices and glaze with the egg wash and herbs and close the lid until the cycle is complete.
