
Almond bread is a cake bread or batter bread that gets its almond flavor from almond paste and a topping of slivered almonds. Like all cake breads the dough resembles pancake batter rather than the customary dough ball. That’s because baking powder is used in place of yeast.
Because there is no yeast the batter dough will not rise before baking unlike a yeast bread dough which can double in size while rising. You can make this recipe from start to finish if you have a cake bread setting on your bread machine, or you can use the machine to mix, knead and blend the batter and then finish in the oven in a buttered bread pan.
If you’re going to finish in the oven you should use a pizza dough or pasta dough setting. They don’t have a rise cycle following the kneading cycle and a batter bread doesn’t need to rise before baking. It will rise in the oven towards the end of the baking process. Once the batter is ready top with the almonds either in the machine or in the bread pan.
Add the ingredients to the bread pan in the order indicated but reserve the almonds to be added later in the kneading cycle at the beep for adding fruit or nuts. If your bread machine has a fruit and nut hopper place the almonds into the hopper.
Select the cake bread setting for a 1-pound loaf. If your bread machine does not have a cake bread setting, mix and knead the batter using the pasta or pizza dough setting.
If all you have is a dough setting, pour the batter out into a buttered bread pan after the kneading cycle but before the rising cycle. Preheat the oven to 350° F. and bake for 45 to 50 minutes.
Do the test in the center with a skewer or knife and if still wet, put back into the oven and add 10 minutes of baking time. When done, let rest for 10 minutes and slice and serve.
