Oatmeal Bread RecipeBy Steve NubieLet’s start simple with an artisanal bread recipe that’s easy to make and gives you the look, texture and taste of a true artisan recipe. Rolled oats are the key plus a flour combination of bread flour.
Basil Bread RecipeBy Steve NubieLet’s have some fun. It’s easy to make a basic bread and add basil and that’s okay. Fresh basil is a wonderful herb but if it’s winter and fresh basil is not available, fear not. Just add more dried basil and we’ll tell you how much. But there’s another possibility: I’ve added some chopped tomatoes and mozzarella cheese to this bread recipe with either fresh or dried basil and it has the flavor profile of a pizza Margherita or a classic New York style pizza. For the record, this is not about making a pizza dough but a traditional white bread loaf with some pizza ingredients. You can go the simpler route and just add dried basil or fresh basil as indicated, but we’ll give you some additions in the INGREDIENTS list you might want to consider as an experiment.
Egg Bread RecipeBy Steve NubieThere are many variations on egg bread. Some cultures like the Greeks incorporate whole eggs in the shell into the loaf at Easter, while some Eastern European traditions embedded one egg in the loaf at New Year’s. The person who got the egg was considered a guest of honor and would have good luck for the rest of the year. This recipe is a bit simpler with cracked eggs added as an ingredient in various forms from yolks only to yolks and whites, and an egg yolk glaze to finish the loaf. This recipe is going to go through the dough cycle in the bread machine and then we’ll finish the loaf in the oven. We’re also going to do a basic double braid, but nothing as complicated as the multiple braids of a Challah bread.
Potato Rosemary Bread RecipeBy Steve NubiePotato bread can either be made with real mashed potatoes or with instant mashed potato flakes. This bread was traditionally made to add a hearty starch ingredient to the flour, and was also made to help supplement dwindling stores of flour in the spring. The rosemary is optional on the off-chance that you don’t like rosemary. You can add any other herb in the proportions indicated, or skip them altogether. You probably won’t discern a distinctive potato flavor, but you will notice a denser texture and consistency and a bit of a “chew” in the bread especially in the crust.
Apple Cake Bread RecipeBy Steve NubieThis recipe for an Apple bread is actually a cake-bread or batter bread and can either be made in a bread machine or finished in the oven. It uses the cake setting on a bread machine, but if you’re machine doesn’t have a cake setting you can always use the pizza dough setting and bake it in a bread pan in the oven. The reason you use the pizza dough setting to mix the batter is because it doesn’t have a rising cycle which is unnecessary for a cake bread. The typical recommendation for any baking apple is a green-apple like a Granny Smith. I’ve used every kind of apple for baking and you should feel free to use what you like or have on hand. They’ll need to be peeled, cored and chopped but the apple flavor will always come through regardless of the variety.
Cranberry Cake Bread RecipeBy Steve NubieCranberries have been identified as one of the healthiest foods we can eat. In fact, is has more iodine for a terrestrial food source than any other. 99% of our iodine comes from the oceans. There’s little iodine on land but cranberries break the bank in addition to being a great source of vitamins C, D, A and an excellent source of calcium, iron and magnesium. For this recipe, we’re going to use a dried form of cranberry sometimes known as “Craisins.” They’re already sweetened and don’t add a lot of soupy cranberry juice to the batter nor the natural bitterness present in cranberries.
Lemon Cake Bread RecipeBy Steve NubieThis is a cake-bread made with a good amount of lemon juice and lemon zest. Zesting is easy to do if you buy a “zester,” but if you don’t have one you’ll have cut the top skin of the lemon off very thinly and then julienne or slice it very thin. Zesting is all about getting only the top layer of the lemon skin which has the most oils and intense lemon flavor. You’ll then have to juice the lemon. If you have a lemon juicer that’s easy to do but the seeds still have to be removed. You can also squeeze the lemon into your hands and allow your fingers to catch the seeds.
Sweet Mint Bread RecipeBy Steve NubieIf you have mint growing anywhere in your yard or garden you probably have too much of it. Mint spreads faster than most weeds. But it is a wonderfully aromatic herb and comes in varieties ranging from spearmint to peppermint. Fresh mint has the most flavor, but dried mint delivers the mint flavor notes for as much as you would need for this bread recipe. We’re also going to add a variable and that’s maple syrup. Mint seems to go well with sweet things so let’s make a bread that has the sweetness of maple syrup and the flavor accent of mint.
Dill Bread RecipeBy Steve NubieThis is a great bread to have with a hearty meal from pastas with sauce to meats and poultry. You can use either fresh dill or dried dill. If using fresh dill, strip the leaves from the stems and chop it finely. You can also add other ingredients. I added some dried onions to this recipe. What’s wonderful about dill bread is that it will fill the kitchen with the fresh, fragrance of dill while it’s rising and baking. Other surprising variations include the addition of chopped dill pickles, which makes a great hot dog or hamburger bun. For that variation select the dough course and shape into the bun shape you want and let rise on an oiled baking sheet. Bake at 375° F. /190° C. for 20 minutes or until browned. We’re going to keep it simple for now and go with the basic dill and onion recipe in the bread machine.
Cinnamon Applesauce Bread RecipeBy Steve NubieThis is a robust cake bread and yeast bread hybrid that captures the flavors of Autumn as a complement to dinner on a brisk Fall night. It results in a batter-like consistency, but the addition of yeast in addition to baking powder gives it a lightness that balances the robust ingredients. The traditional recipe calls for raisins but you can substitute Craisins also known as dried cranberries if you like. You use the white bread cycle because of the addition of yeast although it will not rise a much like most yeast breads. If you have a cake-bread cycle that could work too but I’ve had equal success with the White-bread cycle.
Cranberry Walnut Bread RecipeBy Steve NubieThis bread recipe falls into the category of a superfood thanks to the cranberries, walnuts and cinnamon. It’s a hybrid loaf because it calls for both yeast and baking soda. The bread rises following the kneading cycle and then rises some more as it bakes thanks to the baking soda. This bread is great for instant energy and probably more nutritious than an energy bar. It makes a great sandwich bread for chicken or turkey and is great dipped into a soup or toasted at breakfast. Make sure you reserve the cranberries and walnuts for addition to the bread machine at the beep towards the end of the kneading cycle, or use your fruit and nut hopper if your machine has one. Tossing the dried cranberries in flour will make the sticky fruit more likely to pour from the hopper instead of getting stuck to the sides.
Zucchini Bread RecipeBy Steve NubieThis zucchini bread recipe has a unique addition. It includes some Pumpkin pie spice to give the loaf an added burst of flavor. This is a great harvest season recipe when you have more zucchini than you know what to do with. It’s also good year-round if your local grocer has zucchini in stock.
