
This recipe for pumpkin bread is different from many other recipes. Most pumpkin bread recipes are for a cake bread or batter bread made with baking powder. This a yeast bread that rises and is lighter and airier than a cake bread. It has all of the flavor notes of pumpkin pie including some pumpkin pie filing and pumpkin pie spices.
This bread is easy to make in your bread machine from start to finish using the basic white bread setting. It’s terrific at breakfast or as a sandwich bread with savory meats like ham or salami because of the contrast of its sweet and spiced flavor. It’s also a great foundation bread for French toast or as a buttered treat at tea time.
Add the water, brown sugar and yeast to the bread pan and let rest for 15 minutes to allow the yeast to activate.
Add the remaining ingredients in the order indicated in the recipe.
Select the basic bread setting for a 1.5-pound loaf and a medium crust.
After the rising cycle is complete and before the baking cycle begins, glaze with a slurry of the egg yolk and water. (optional)
When done, remove the loaf from the bread pan and let rest for 10 minutes. Slice and serve.
