
There are some classic steakhouse breads that typically have a dark texture and crust and a soft sweetness that goes great with hearty main dishes like steak or pork. This recipe is both darkened and sweetened by dark molasses and the addition of cocoa. It’s a yeast bread with a significant amount of yeast that can be easily made in your bread machine from start to finish. It also calls for a combination of rye flour and all-purpose flour.

This recipe calls for a yeast “proofing” step. Proofing the yeast involves allowing the yeast and warm water plus sugar to bring the yeast to life. After about 6 minutes the mixture will bubble a bit and you’re ready to continue with the rest of the recipe.
Add the proofing ingredients to the bread pan and let rest for 6-minutes until you see some small bubbles.
Put all of the ingredients in the bread pan in the order indicated in the ingredients list on top of the proofed yeast solution and select the wheat bread setting for a 1-pound loaf and a dark crust.
When done, remove from the bread pan and let rest for 10 minutes on a wire rack. Slice and serve.
