Muffins Recipe From Your Bread Maker

Everybody loves muffins and your bread machine can make the basic batter easy to make.  We’re going to cover a basic muffin recipe and then ways to easily enhance them with blueberries, chocolate chips, coconut and good old, plain muffins.

 1 cup of milk
 1 cup of buttermilk
 1 teaspoon of salt
 4 tablespoons of sugar
 2 eggs
 ½ cup of melted butter
 1 tablespoons of baking powder
 4 cups of all-purpose flour

Put all of the ingredients into the bread pan of the bread machine in the order indicated and select either the pasta dough setting or the cookie dough setting. If your machine doesn’t have these setting, select the basic dough setting but stop the machine after the mixing and kneading cycle and before the rising cycle begins.

Having Fun with Muffin Variations

Creating muffin varieties is very simply once you have the basic batter prepared. This recipe calls for two 12-cup muffin pans. Place a cupcake liner into each muffin cup and then you can explore options. I like to put some blueberries into 6 cups, some chocolate chips into another 6 and finally some shredded coconut into 6 more. I’ll leave the last 6 cups empty for a basic muffin.


Preheat the oven to 375 degrees Fahrenheit or 190 degrees Celsius. Now it’s time to get the batter into the cups. After you’ve dropped in your flavor additions, spoon the batter into the cups until they’re 2/3 full and then top with more of your flavor ingredients. Try to remember which cups had the blueberries or chocolate chips unless you want to have a medley of flavors.


Bake for 20 to 25 minutes or until the tops of the muffins are browned. Let rest for 5 minutes and dig in.
