Gluten-Free Pizza Dough Recipe

Pizza dough is a natural for gluten free cooking. Use the pizza dough setting on your bread machine. The pizza dough setting does not have a rise cycle which is unnecessary for a pizza dough. Don’t use the gluten free setting, the ingredients will give you the gluten free dough that you want. I’ll usually let the rest on the baking sheet after I’ve rolled it out. It won’t rise a lot but you’ll get some lift from the yeast. You can then top it with your favorite pizza toppings and finish it in the oven.

INGREDIENTS:
 1 cup buttermilk or rice milk.
 4 tsp apple cider vinegar and rested for 15 minutes
 0.25 cup water, at room temperature
 1 whole large egg
 3 large egg whites, at room temperature
 0.25 cup extra virgin olive oil.
 1 cup brown rice flour
 1 1/2 cups potato starch.
 0.50 cup corn starch
 1 tsp fine sea salt
 1 tbsp sugar
 1 tbsp xanthan gum
 1 Tablespoon of yeast

Add to the machine in the order indicated or as indicated by your manufacturer in their cookbook, and select “pizza dough” setting, or “dough” setting

Remove when done and divide and roll out to create a pizza round to the shape you like and top with your favorite toppings

Finish in the oven at 375 F. until crust is lightly browned. This will depend on the size or diameter of your pizza.
