Gluten-Free Chocolate Chip Cookies Recipe

Some bread machines have a cookie dough setting. If yours does not you can always use the pizza dough setting. The pizza dough setting mixes and kneads the dough but does not have a rising cycle which is unnecessary for a cookie dough. The cookies are finished in the oven on a baking sheet and here again it’s a good idea to combine gluten free flours to make the cookies.

 1 1/8 Light buckwheat flour
 0.50 tsp Baking soda
 0.50 tsp Salt
 0.50 cup (1 stick) unsalted butter
 0.75 cup Brown sugar
 0.50 tsp Vanilla extract (for chocolate mint chip cookies, use 1 teaspoon peppermint extract)
 1 Large egg
 1 cup gluten-free chocolate chips (6 ounces)
 0.50 cup Chopped nuts (optional)

Preheat oven to 375° F / 190° C


Add to bread machine and use “cookie dough” setting.


Line 2 large baking sheets with parchment paper or lightly oil.


For 2 dozen small cookies use a tablespoon and dollop onto baking sheet.


Bake in preheated oven for 9-11 minutes or until cookies are crisp on edges and slightly soft in the middle. Cool on baking sheet and then transfer to a plate or cookie screen to finish.
