
Cottage Cheese bread has a delicate yellow texture and a slight tanginess from the cottage cheese. It’s a great bread with soups or salads and will stand up to the robust flavor of meat dishes. It’s a yeast bread but it calls for the addition of a ¼ teaspoon of baking soda to give it an added rise.
This is an easy bread to make in your bread machine but just make sure the ½ cup of water called for in the recipe is 110 degrees F. or 43 degrees C. An easy way to get that temperature is to put the water in a Pyrex measuring cup in the microwave for 30 seconds. You should be very close to the ideal temperature.
As an option you can glaze the top of the dough with an egg yolk whisked into a tablespoon of water after the rising cycle and before the baking cycle begins. Do this quickly so the loaf doesn’t sink or fall. A nice touch is to quickly slash the top of the loaf with a knife after glazing.
(Makes a 1.5-pound loaf)
Place all of the ingredients in the bread machine in the order indicated in the ingredients list.
Select the basic white bread setting for a 1.5-pound loaf and a dark crust.
When done, remove the loaf from the bread pan and let rest for 10 minutes.
Slice and serve.
