
This bread recipe uses a flour made from chickpeas. The great thing about chickpeas is not only the flavor but that fact that this flour is gluten free. You can find chickpea flour in high-end grocery stores and it’s usually in the specialty baking aisle.
The appearance of this recipe is more of a flatbread rather than traditional yeast or cake bread. In fact, neither yeast nor baking soda is used as an ingredient. The dough is made in the bread machine using either a pizza dough or pasta dough setting. You could also use a cookie dough setting if your machine has one. If all you have is a basic dough setting that will work but take the dough out before the usual rising cycle starts at the end of the kneading cycle.
The dough is poured into two circular cake pans that have been either buttered, or lightly oiled if you want to do a vegan bread recipe. The chickpea bread is then finished in a conventional oven. The timing and temperature are identified in the directions below.
You can top this bread with any topping you like. This particular recipe has an Italian flavor and a topping of coarse bread crumbs toasted and crumbled using the extra chickpea flat.
Place all of the ingredients in the bread pan with the exception of the toppings. Select the dough cycle you happen to have on your bread machine and begin the cycle.
Pour the dough into two buttered or oil cake pans and let rest in the pans for 4 to 6 hours.
At the end of the resting period, top with your favorite toppings. Towards the end of this resting period, preheat the oven to
450 degrees Fahrenheit and once preheated -bake for 15 minutes or until the edges begin to brown.
Let rest for 10 minutes and then slice into wedges and serve.

be interesting to see how it goes using the bread maker, I see there is a pizza base as well. Must try that too
The dough setting is the key. All the machine is doing is mixing and kneading a dough whether it’s for chickpea bread or a pizza crust. After that, how you shape it and bake it is up to you. Hope it all works out well.
