Cherry Yogurt Bread Recipe

Yogurt is often used in many bread recipes and the fruit flavor of the yogurt is typically accompanied by pieces of the actual fruit.  This recipe is for a cherry yogurt bread and real cherries are added to the bread dough.  If cherries are out of season in your area or unavailable, you can use canned or frozen cherries.  Thaw frozen cherries until they reach room temperature, or they will interfere with the rise from the yeast.  Sweet cherries are recommended.

The entire recipe can be made in your bread machine from start to finish.  The critical step is knowing when to add the cherries.  Half of the cherries are added at the beginning and the other half added towards the end of the kneading cycle when you would typically add fruit or nuts.  If you have a fruit and nut hopper you can add the last half of the cherries to the hopper and let the machine do all the work.  Any yogurt will work but Greek yogurt is recommended. 

INGREDIENTS:
 1 8-ounce carton of cherry yogurt at room temperature
 1/3 cup of warm water (110 degrees F)
 4 tablespoons of butter melted
 2 teaspoons of salt
 ½ teaspoon of ground nutmeg
 1/3 cup of sugar
 4 cups of all-purpose flour
 2 cups of sweet cherries or canned or frozen cherries
 2 tablespoons of bread machine yeast or active dry yeast
DIRECTIONS:

Add all of the ingredients to the bread pan in the order indicated in the ingredients list. Select the basic white bread setting for a 2-pound loaf and medium crust.

When done, let the loaf rest on a wire rack for 10 minutes and slice and serve .

      Here are the revised proportions for a 1.5 pound loaf:
      1 8-ounce carton of cherry yogurt at room temperature
      1/4 cup of warm water (110 degrees F)
      3 tablespoons of butter melted
      1 1/2 teaspoons of salt
      ½ teaspoon of ground nutmeg
      1/3 cup of sugar
      3 cups of all-purpose flour
      2 cups of sweet cherries or canned or frozen cherries
      2 ½ teaspoons of bread machine yeast or active dry yeast
      Remember to, if the dough looks a little dry, add a tablespoon of water at a time until it forms a nice dough ball. If the dough is too wet, add a tablespoon of flour at a time until the machine gives you the same, nice dough ball. lt should look like a large ball swirling around in the bread pan with no dough or flour sticking to the sides of the pan.
