My Recipes
Outbreak Steakhouse Bread RecipeBy Steve NubieThere are some classic steakhouse breads that typically have a dark texture and crust and a soft sweetness that goes great with hearty main dishes like steak or pork.  This recipe is both darkened and sweetened by dark molasses and the addition of cocoa.  It’s a yeast bread with a significant amount of yeast that can be easily made in your bread machine from start to finish.  It also calls for a combination of rye flour and all-purpose flour.
Empanadas RecipeBy Steve NubieVariations on the concept of an empanada can be found around the world from Cornish pasties to Chinese dim sum variations to the classic empanada. Empanadas are essentially a turnover made with a very thin circle of dough that is folded over and sealed around a filling of everything from fruits to meat.  The basic dough is easy to make in your bread machine using either the pasta dough or cookie dough setting.
Muesli Bread RecipeBy Steve NubieMuesli is a whole grain blend of various grains and fruit that is often eaten as a breakfast cereal or snacked on like a trail mix.  This very healthy blend of grains, nuts and fruits can be made into a bread with the addition of some simple bread ingredients like flours, water, and yeast plus some salt and sugar.
Blueberry Cake Bread RecipeBy Steve NubieBlueberry bread is made with fresh blueberries and every bite delivers a burst of blueberry flavor.  It’s a great dessert bread and perfect at tea time with tea or coffee.  It’s also surprisingly good with many savory dishes like beef and pork and wild game.  In fact, an Eastern European venison recipe is famous for it’s brown blueberry sauce.  This recipe is actually a cake bread or batter bread recipe, and the final product before baking has a batter-like consistency.  This is due to the fact that baking powder is used instead of yeast.  Because the batter is without yeast it creates some challenges for anyone using their bread machine to make this recipe.
Burger Buns RecipeBy Steve NubieEverybody loves hamburgers and these buns will make any burger special.  And it’s not just about burgers.  Pulled pork, chicken or turkey, even cold cuts taste better on a homemade bun.  Better yet, your bread machine can make this recipe easy using the dough setting to knead your dough before you shape the buns and finish them in the oven.
Butter Cake Bread RecipeBy Steve NubieButter cake is actually a cake bread or batter bread recipe.  It includes a half a cup of butter and a cup and a half of sugar as ingredients and the final product before baking has a batter-like consistency.  This is due to the fact that baking powder is used instead of yeast.  Because the batter is without yeast it creates some challenges for anyone using their bread machine to make this recipe.
Fergasa Bread RecipeBy Steve NubieIt’s quite likely you have not heard of Fergasa bread.  It’s essentially a white bread with the addition of green onions, cubed cheddar cheese, hot sauce and a flavor note from basil.  It’s actually a Canadian  bread recipe that seems to have emerged from the Winnipeg area of Ontario.  It’s not to be confused with the Fougasse bread from France which is more of a pretzel.  Fergasa bread is a loaf and a thick slice toasted makes a great sandwich or a dipping bread for soups or stews.
Cinnamon Rolls RecipeBy Steve NubieCinnamon rolls are a classic American treat.  They’re buttery, sweet and the flavor of cinnamon and a powdered sugar-based glaze make this a great breakfast addition with anything, especially coffee.  The key is to make sure the dough rises in the bread machine and then has a good, second rise on a baking sheet before baking in the oven.  If you don’t allow the time for a good second rise your rolls will be chewy and tough.
Black Pepper Onion Bread RecipeBy Steve NubieBlack Pepper Onion bread is packed with flavor and is great with soups, stews or gravy-based meals.  It’s also great toasted and buttered as a side dish or for a sandwich.  The incorporation of the onions into both the dough and as a crispy, caramelized topping come out slightly sweet.  The pepper is a great accent to the flavor and you can increase or reduce the amount depending on your taste for pepper.
Cinco de Mayo Bread RecipeBy Steve NubieCinco de Mayo is a day that celebrates Mexican independence.  Cinco de Mayo bread is a traditional treat often prepared for this holiday on May fifth, but many people make it all year long.  The bread is traditionally baked in a circular, cast-iron skillet and has flavor notes that come from traditional Mexican ingredients like cornmeal, green chilies, jalapenos, cilantro and creamed corn.  You can use fresh or canned green chilies and jalapenos.  Just make sure you drain off the juice if you’re using canned peppers.
Orange Bread RecipeBy Steve NubieIf you love oranges, wait until you taste this bread.  It is packed with orange flavor from orange juice and orange rind.  It’s so loaded with orange flavor the color of the bread is actually orange.  You can make this bread from start to finish in the bread machine, so you won’t need to fuss with an oven after a dough cycle in the machine like some bread recipes require.  This recipe calls for 2 tablespoons of orange rind which could leave you with 3 to 4 oranges with the skin removed.  Rather than throw them out, see if you can squeeze out some of the juice and supplement any shortage with orange juice from the fridge.
Ethiopian Honey Bread RecipeBy Steve NubieAs the name suggests, this bread has its origins in Ethiopia.  It is typically served as bread rolls.  The reason for this is related to a style of eating across the Middle-east and Africa.  Foods based on beans, rice, vegetables and seasonings were often served on a large platter and people would tear off a piece of bread and use their fingers to squeeze the bread around the rice and bean mixture.  Honey gave it sweetness to offset the heavily spiced main dishes, but this bread is no slouch when it comes to spices.  Traditional pie spices like cinnamon, cloves and coriander give accent the sweetness of the honey.
Asian (Water Roux) White Bread RecipeBy Steve NubieAsian bread or as it’s commonly referred to “Roux bread,” is a very light and delicate yeast bread made with white flour and a complex process.  The fundamental recipe is very similar to Hawaiian Sweet Bread but it’s a bit more complex.
Banana Macadamia Nut Bread RecipeBy Steve NubieThis is a wonderfully sweet bread with a great banana flavor and the added note of Macadamia nuts and a topping of sliced almonds.  It can be made from start to finish in the bread machine and is great as a breakfast treat, a dessert and with coffee or tea.
Black Forest Cake RecipeBy Steve NubieAs you might suspect from the name, Black Forest cake has its origins in the Black Forest of Germany.  There are various opinions about the origin of the recipe, but some believe the preponderance of cherry trees in the Black Forest was a motivating factor in the development of this recipe.
Apple Streusel Coffeecake RecipeBy Steve NubieApple streusel is a traditional German cake that features 3 layers of flavor.  The first layer is a butter batter that is spread across the bottom of a buttered and floured spring-form cake pan.  The second layer consists of thin slices of apple and the final topping is the streusel.
Beer Rye Bread RecipeBy Steve NubieBeer is a great ingredient in many bread recipes.  It adds a body and feeds the yeast to help the rise.  This recipe allows you to use any beer you like, and you can use other beers in combination as long as you adhere to 1 ½ cups of beer in total.  The beer should be at room temperature to help the yeast to rise.  Rye flour is the obvious flower of choice, but some corn meal and a good amount of bread flour is also recommended to get a good rise.  This recipe makes a 2.5 -pound loaf so if you don’t have that capacity on your bread machine, you might want to cut the recipe in half.  You can make this bread recipe from start to finish in your bread machine using the basic dough setting.
Millet Flour Bread RecipeBy Steve NubieMillet is an ancient grain like amaranth and spelt.  Unlike most grains that grow on grasses, millet is a cluster of seeds that grows on a leafy plant.  The millet seeds are very small and similar to the size and appearance of amaranth.  They also have significant nutritional health benefits with high concentrations of proteins and micronutrients, and are gluten free.  If you are following a gluten free diet or simply want to enjoy and highly nutritious and natural bread, give this recipe a try.  If you can’t find millet flour you can buy whole millet seeds and grind them to a flour in a food processor.
Cherry Yogurt Bread RecipeBy Steve NubieYogurt is often used in many bread recipes and the fruit flavor of the yogurt is typically accompanied by pieces of the actual fruit.  This recipe is for a cherry yogurt bread and real cherries are added to the bread dough.  If cherries are out of season in your area or unavailable, you can use canned or frozen cherries.  Thaw frozen cherries until they reach room temperature, or they will interfere with the rise from the yeast.  Sweet cherries are recommended.
Coconut Flour Bread RecipeBy Steve NubieCoconut flour is gluten free and this bread has a surprising texture and sweetness for a gluten free recipe.  It also uses flakes of coconut to add texture to the bread and as a crispy topping.  The surprising thing about coconut flour is the small amount that’s needed to make this bread.  Coconut flour expands significantly when it comes in contact with any liquid so a little goes a long way.
Scones RecipeBy Steve NubieScones are a classic breakfast and dessert treat that are both flaky and sweet.  They’re essentially a triangle of a rich dough that’s easy to make in the bread machine, and then finished in the oven.  Typically, they’re dusted with a topping of powdered sugar.  They’re great at tea-time or with coffee and can be dipped into both.
Carrot Bread RecipeBy Steve NubieUnlike carrot cake which is so popular, this is a carrot “bread.”  It’s a very healthy choice and you can make it from start to finish in your bread machine.  Of course. you’ll need some carrots and they’ll need to be shredded in a food processor or with a hand-held grater. Most of the carrots are incorporated into the batter with some in reserve as a topping.
Chocolate Chip Cookies RecipeBy Steve NubieChocolate chip cookies are a family classic and the cookie dough is easy to make using your bread machine. This recipe calls for the traditional semi-sweet chocolate chips and the optional addition of chopped walnuts. These cookies are finished in the oven on an ungreased baking the sheet. The amount of butter in the cookie dough compensates and the cookies won’t stick to the pan.
Brownies RecipeBy Steve NubieEverybody loves brownies and your bread machine can make this recipe easier using the cookie dough setting to make the brownie batter, and the bread dough setting to make the chocolate frosting. Brownies are great any time of day and are a great winter treat especially when they’re served warm from the oven.
Chickpea Flour Bread RecipeBy Steve NubieThis bread recipe uses a flour made from chickpeas.  The great thing about chickpeas is not only the flavor but that fact that this flour is gluten free.  You can find chickpea flour in high-end grocery stores and it’s usually in the specialty baking aisle.
