Sally Lunn Bread RecipeBy Steve NubieIt should be no surprise that Sally Lunn bread is named after a woman named Sally Lunn.  She was a pioneer woman who developed a bread recipe in the 1800’s that was so widely enjoyed that people started to call the bread by her name.  The secret is a combination of ingredients you would expect to find in a cake in a bread made with yeast instead of baking powder.
Dutch Oven Bread RecipeBy Steve NubieA Dutch oven is a large cast iron pot with high sides and a lid.  It’s usually used for outdoor cooking over coals with some coals on top of a lid with a raised lip.  It was a standard way to bake for pioneers and made a crusty artisanal bread.  But you don’t need a Dutch oven to make this recipe.  All you need is your bread machine and an ovenproof bowl.
Pumpkin Spice Bread RecipeBy Steve NubieThis recipe for pumpkin bread is different from many other recipes.  Most pumpkin bread recipes are for a cake bread or batter bread made with baking powder.  This a yeast bread that rises and is lighter and airier than a cake bread.  It has all of the flavor notes of pumpkin pie including some pumpkin pie filing and pumpkin pie spices.
High Fiber Bread RecipeBy Steve NubieWho can say no to high fiber?. Its benefits go beyond regularity to heart health. And guess what? You can make a great high fiber bread in your bread machine! Start to finish.
Cuban Bread RecipeBy Steve NubieCuban bread is a rustic white bread made with some surprising ingredients including lard.  It’s a traditional yeast bread but it requires a preliminary yeast-proofing step that’s easy to do in the bread machine.  If lard is something you don’t keep on hand you can always use rendered bacon fat.  Other options include shortening or butter, but the traditional recipe was a Cuban farm recipe and shortening was the fat of choice.
Cottage Cheese Bread RecipeBy Steve NubieCottage Cheese bread has a delicate yellow texture and a slight tanginess from the cottage cheese.  It’s a great bread with soups or salads and will stand up to the robust flavor of meat dishes.  It’s a yeast bread but it calls for the addition of a ¼ teaspoon of baking soda to give it an added rise.
Cardamom Bread RecipeBy Steve NubieCardamom is a spice sometimes used in pie recipes like apple pie and apple desserts.  It’s also used to accent fruit dishes and as a flavoring for sweet potatoes.  It originates in Central America and sometimes appears in curries and contemporary Scandinavian dishes. It occasionally appears in breads because of its unique savory and aromatic flavor-note.
Strawberry Shortcake Bread RecipeBy Steve NubieStrawberry shortcake bread is a great dessert on its own or you can toast and spread it with cream cheese; use it to make French toast and even use it as a sandwich bread with your favorite cold cuts and condiments. Better yet, you can make strawberry shortcake bread from start to finish in your bread machine.
Corn and Flour Tortillas RecipeBy Steve NubieBoth corn tortilla and flour tortilla doughs are easy to make in your bread machine using either a cookie dough setting or pasta dough setting.  You don’t need to use the basic dough setting because that has a rising cycle and tortillas are made without yeast so rising is unnecessary.  If a basic dough setting is all you have on your machine, you can use that setting but remove the dough after the kneading cycle and before the rising cycle begins.
Welsh Bread (Bara Brith) RecipeBy Steve NubieWelsh bread, also known as Bara Brith is a traditional English tea bread. Bara Brith is Welsh for speckled bread. The speckles come from the raisins that run throughout the loaf in every slice. Other dried fruits like currants were sometimes used and in this instance were using dried cranberries or “craisins” as they’re commonly called.
Spelt Pretzels RecipeBy Steve NubieSpelt is an ancient grain related to wheat. Contrary to what some believe, it is not gluten-free like many other ancient grains. It can be a little hard to find so check your specialty aisle in your grocery store or try a store like Whole Foods or an ethnic grocer. Spelt has a distinctive, nut-like taste and is very high in nutrients. It also makes a great pretzel.
Zuni Indian Bread RecipeBy Steve NubieThe Zunis are a Native-American tribe that originally occupied parts of the American Southwest. Like their neighbors the Hopi and the Navajo, much of their food was defined by an agriculture based on corn or maize. That was the only ingredient in this ancient bread and is the primary ingredient in this contemporary interpretation of the original recipe.
Butternut Squash Bread RecipeBy Steve NubieButternut squash is often referred to as a winter squash. It’s naturally sweet and high in both vitamin-A and beta-carotene. While the squash itself imparts little flavor to the bread it does make the bread extra moist and lends a light, orange color to the texture. We’re going to take it up a notch with the addition of pumpkin pie spices like cinnamon, nutmeg, cloves and brown sugar.
Mango Cake RecipeBy Steve NubieMangoes are a tropical fruit with an orange color and citrusy, melon-like flavor. This recipe makes a cake bread or batter bread. It has the consistency of a pound cake when baked. You can make a Mango cake from start to finish in a bread machine, but you need a batter bread or cake bread setting.
Popovers RecipeBy Steve NubiePopovers tend to make rare appearances on many dinner tables. They’re usually served and reserved for Holidays and special occasions. And that’s too bad because they’re so easy to make and taste so good. Better yet, your bread machine can make this recipe easier. But there’s a catch.
Caraway Rye Bread RecipeBy Steve NubieCaraway Rye bread is a traditional Eastern European bread recipe.  It’s still popular across Russia, Germany and the Baltic states.  This was largely due to the fact that rye grains were easy to grow in bitter climates and not only grew well on farms but in the wild as well.
Panettone Bread RecipeBy Steve NubiePanettone is a classic Italian cake traditionally made for Christmas. It’s a light and fluffy fruit-cake. Most fruit cakes I’ve had in my time had the consistency of concrete, but Panettone is different. One of the things that makes it so light is the use of a yeast starter that’s allowed to ferment overnight. This starter is why a Panettone has a such a soft and tender texture. This step is sometimes referred to as “proofing.”
Ho Yin Bread RecipeBy Steve NubieHo Yin bread is a unique Chinese bread recipe. One of the things that makes it unique is the fact that China is not a traditional bread culture. Most of the starches in China fall in the category of rice or noodles. Yeast breads are rare but this one was made especially for children. What makes it appealing to kids are the orange, brown sugar and Chinese Five Spice Powder flavor notes.
Victorian Sponge Cake RecipeBy Steve NubieVictorian Sponge cake is a classic British recipe that was often served at high tea-time in the afternoon. The recipe and the tradition followed the British to their colonies from Hong Kong and India to The United States. It’s a light batter bread filled and topped with a red raspberry filling and then further topped with fresh red raspberries.
Sourdough Pizza Crust RecipeBy Steve NubieIn order to make a sourdough pizza crust you have to make a sourdough starter. You could buy a starter at some grocery stores like Whole Foods but making your own is easy. You can keep it going if you choose but for the sake of this recipe we’re going to make just enough for the crust.
Shepherd’s Bread RecipeBy Steve NubieShepherd’s bread was actually a mainstay for shepherds in Western Europe especially the Basque shepherds of Spain.  It appealed to them for a number of reasons.  For one, the recipe was very simple and easy for them to make.  They also enjoyed the durable and crusty nature of the bread due to the use of whole wheat flour.  Finally, the bread kept very well in a backpack or an over-the-shoulder pack without getting crushed.
Squaw Bread RecipeBy Steve NubieSquaw bread is the result of a curious hybrid of cultures.  Immigrant Germans and Native Americans.  The fundamental contribution from the German side was the use of rye flour to make their bread.  The Native Americans provided the other needed ingredients including honey, raisins, sea salt and cornmeal.  Other ingredients have found their way into the recipe from whole wheat flour to butter.  The resulting bread falls in the category of artisanal breads with good texture and a crispy crust.
Pina Colada Bread RecipeBy Steve NubieAs the name implies, this bread has all of the flavor of a Pina Colada.  It combines the unique flavor notes of the drink in the recipe including crushed pineapple, pineapple juice, shredded coconut and even some rum.  If you don’t want to use rum you can substitute a mixture of molasses and water.
Lemon Poppy Seed Cake Bread RecipeBy Steve NubieThis bread was inspired by Canadians where you’ll find both maple syrup and wheat in abundance.  But they didn’t stop there and added everything from nutmeg and cinnamon to powdered sugar, butter and raisins.  Lots of raisins.  The result is a highly flavorful white bread with a very good nutritional profile and the added accent (and Vitamin-C) of a tablespoon of either grated lemon peel or orange peel.
Maple Syrup Bread RecipeBy Steve NubieThis bread was inspired by Canadians where you’ll find both maple syrup and wheat in abundance.
