Sally Lunn Bread RecipeBy Steve NubieIt should be no surprise that Sally Lunn bread is named after a woman named Sally Lunn.  She was a pioneer woman who developed a bread recipe in the 1800’s that was so widely enjoyed that people started to call the bread by her name.  The secret is a combination of ingredients you would expect to find in a cake in a bread made with yeast instead of baking powder.
Dutch Oven Bread RecipeBy Steve NubieA Dutch oven is a large cast iron pot with high sides and a lid.  It’s usually used for outdoor cooking over coals with some coals on top of a lid with a raised lip.  It was a standard way to bake for pioneers and made a crusty artisanal bread.  But you don’t need a Dutch oven to make this recipe.  All you need is your bread machine and an ovenproof bowl.

Corn and Flour Tortillas RecipeBy Steve NubieBoth corn tortilla and flour tortilla doughs are easy to make in your bread machine using either a cookie dough setting or pasta dough setting.  You don’t need to use the basic dough setting because that has a rising cycle and tortillas are made without yeast so rising is unnecessary.  If a basic dough setting is all you have on your machine, you can use that setting but remove the dough after the kneading cycle and before the rising cycle begins.

Shepherd’s Bread RecipeBy Steve NubieShepherd’s bread was actually a mainstay for shepherds in Western Europe especially the Basque shepherds of Spain.  It appealed to them for a number of reasons.  For one, the recipe was very simple and easy for them to make.  They also enjoyed the durable and crusty nature of the bread due to the use of whole wheat flour.  Finally, the bread kept very well in a backpack or an over-the-shoulder pack without getting crushed.
Sweet Rye Bread RecipeBy Steve NubieSweet Rye bread is the result of a curious hybrid of cultures.  Immigrant Germans and Native Americans.  The fundamental contribution from the German side was the use of rye flour to make their bread.  The Native Americans provided the other needed ingredients including honey, raisins, sea salt and cornmeal.  Other ingredients have found their way into the recipe from whole wheat flour to butter.  The resulting bread falls in the category of artisanal breads with good texture and a crispy crust.
